Golden Macadamias are industry leaders in macadamia processing. After cracking, the main challenge is to separate the kernel from the shell. At this stage all shell and kernel are mixed together, with some tiny shell pieces also present. It is very challenging to remove all the shell from the kernel, and Golden Macadamias use a combination of mechanical shakers, aspirators, optical color sorters, floatation and specialized hand sorting to achieve this. Shell pieces are a natural part of the product, and even though it is impossible to totally eliminate all shell from kernel, we pride ourselves on having some of the lowest shell levels in the industry.
